Almost 25 years ago, four ambitious Koreans in their mid-40s packed their bags and set out for greener pastures. And they found them in Hamilton, Ontario. That’s where the friends established what is today Canada’s leading organic specialty mushroom farm, Enviro Mushroom.
It was their first mushroom farm in Canada. In fact, it was their first mushroom anything. With zero experience in the industry, the foursome, led by Yun Joon Park (Ben), put on their farming gloves and lab coats and got to work trial and error-ing the Korean bottle cultivation method.

Today, Enviro Mushroom operates out of a state-of-the-art facility in Burlington that produces over 3 million pounds of mushrooms yearly. Their certified organic mushrooms are grown in a sterilized organic culture (as opposed to manure) and employ high tech computer programming and stringent sanitary standards. All Enviro mushrooms are delivered to Goodfood within 24 hours of harvest.

ENOKI
Tender and delicate cap with long thin stems.
Flavour profile: Crispy with a mild, earthy, slightly sweet, slightly fruity taste.
Cooking suggestions: Lightly rinse, then remove the lower portion of the cluster. Best served in salads or soups. Excellent in an egg omelet, risottos, tempura or stir fry. Add Enoki just before serving.
BLACK OYSTER
Dark tan cap with long white stem.
Flavour profile: Crunchy on the outside, delicate on the inside and sweet tasting.
Cooking suggestions: Great grilled, roasted, sautéed, stir-fried and deep fried. Simply slice and toss with olive oil or butter. Team with white and red meat, seafood.
KING OYSTER
Soft to darker black & creamy white with donut shaped caps
Flavour profile: Chewy and meaty with an earthy, woody and slightly nutty taste.
Cooking suggestions: Incredibly versatile, they easily uplevel sauces, soups, red meat, poultry and pasta. Sautée in butter or olive oil.
