Preheat the oven to 450°F. Medium-dice the potatoes. Pat the chicken dry with paper towel. In a large bowl, make the glaze by combining the tamarind, ⅔ of the soy sauce and ½ the vinegar. Set aside 1 tbsp of the glaze (double for 4 portions). To the bowl of remaining glaze, add the potatoes, chicken, a drizzle of oil, ⅔ of the spices and S&P. Arrange on a lined sheet pan.

Roast the potatoes and chicken, stirring the potatoes halfway, 14 to 18 min., until partially cooked.

Meanwhile, remove the root ends of the bok choy and separate the leaves (halve crosswise if large); toss with a drizzle of oil and S&P.

When the potatoes and chicken are partially cooked, remove from the oven and add the bok choy. Roast, 6 to 8 min., until the chicken* is cooked through and the vegetables are tender. Brush the chicken with the reserved glaze. Switch the oven to broil, 2 to 3 min., until beginning to brown.

Meanwhile, in a medium bowl, combine the remaining vinegar, soy sauce and spices, and a drizzle of oil. Add the daikon and cabbage; toss well.
