Brown up ground beef with Asian-themed spices, just reheat the rice and sauté it with cabbage and edamame (plus garlic and a splash of rice vinegar for tanginess).   • 250g Ground beef

  • 1 Cucumber

  • 15ml Minced garlic

  • 150g Shredded red cabbage

  • 30ml Rice vinegar

  • 100g Edamame (or green peas)

  • 15g Marinated ginger

  • 225g Pre-cooked jasmine rice

  • 45ml Sweet soy sauce

  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Ground Beef Rice Bowls - Step #1 Cook the beef
Step 1: Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the beef* and ½ the garlic; season with ½ the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Step 2: Sauté the vegetables
Meanwhile, in a second large pan, heat a drizzle of oil on medium-high. Sauté the edamame, 1 to 2 min., until beginning to soften. Add the cabbage and remaining garlic. Sauté, 3 to 4 min., until tender. Add ½ the vinegar, the remaining spices and S&P; stir well.

Step 3: Warm the rice
Meanwhile, poke a small hole in the bag of rice. Microwave, 1 to 1 ½ min., until heated through.

To the pan of vegetables, add the rice. Sauté, 1 to 2 min., until combined.

Meanwhile, halve the cucumber lengthwise; using the side of your knife, gently smash the halves until slightly flattened. Cut into large chunks. Roughly chop the ginger. In a small bowl, combine the cucumber, ginger, remaining vinegar, a drizzle of oil and S&P.

In a second small bowl, combine the soy sauce and 1 tbsp water (double for 4 portions). Divide the vegetable rice between your bowls. Top with the beef, soy sauce and smashed cucumber. Bon appétit!
