with Roasted Brussels Sprouts

Description
Once you’ve put barbecue sauce in the beef for shepherd’s pie, you don’t look back. (We say this from experience.) That luscious, savoury-sweet, pea-studded base is layered with comforting mashed potatoes that will finish with a broil. Forks, prepare to sink in.

250g Canadian-raised lean ground beef
450g Potatoes
200g Brussels sprouts
30ml Organic BBQ sauce (no added sugar)
150g Green peas
30ml Vegetable demi-glace
10g Lively Garlic & Oregano spices (salt, paprika, garlic, vinegar powder, onion, red bell pepper, black pepper, canola oil, oregano, parsley, chives)

Recipe Instructions

- Preheat the oven to 450°F. Bring a medium pot of salted water to a boil.
- Peel and medium-dice the potatoes.
- Add to the pot of boiling water and boil, 14 to 16 min., until very tender.
- Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot.
- Off the heat, add 2 tbsp butter (double for 4 portions).
- Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

- Meanwhile, halve the Brussels sprouts lengthwise (quarter if large).
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring halfway, 12 to 14 min., until golden brown and tender.

- Meanwhile, in a medium pan, oven-safe pan, heat a drizzle of oil on medium-high.
- Add the beef; season with the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until partially cooked.
- Add the peas, BBQ sauce, demi-glace and ¼ cup water (double for 4 portions).
- Cook, stirring occasionally, 2 to 3 min., until slightly reduced and the beef* is cooked through.
- Ground turkey: same instruction as above.

- When the Brussels sprouts are tender, switch the oven to broil.
- Top the beef with the mash and spread in a rustic fashion, making wavy designs with your fork.
- Transfer to the oven and broil, 3 to 5 min., until the top begins to brown.
- Let sit for 2 min. before serving.

- Divide the cottage pie and Brussels sprouts between your plates. Bon appétit!
