Ingredients
for 2 servings
(Double for 4 portions)
250g Canadian-raised lean ground beef
450g Potatoes
2 Garlic cloves
30ml Ketchup
150g Green peas
12g Beef demi-glace
12g Smokin’ Sweetness spices (sugar, paprika, salt, onion, cumin, coriander, mustard, garlic, sunflower oil, black pepper, cayenne pepper, smoked hickory flavour, brown sugar)

Recipe Instructions

- Bring a medium pot of salted water to a boil.
- Peel and medium-dice the potatoes.
- Add to the pot of boiling water and boil, 14 to 16 min., until very tender.
- Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot.
- Off the heat, add 1 tbsp butter (double for 4 portions).
- Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

- Meanwhile, mince the garlic.
- In a medium bowl, combine the beef, ½ the garlic, 1 egg (double for 4 portions), ½ the ketchup, ½ the spices and S&P.
- Form into 2 patties (double for 4 portions).

- In a large pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, 3 to 5 min. per side, until browned and cooked through.
- Transfer to a plate, leaving any browned bits in the pan. Reserve the pan.

- Meanwhile, in a small pan, heat 1 tbsp butter (double for 4 portions) on medium.
- Add the peas and S&P. Sauté, 3 to 4 min., until heated through.

- In the reserved pan, heat a drizzle of oil on medium-high.
- Add the remaining garlic and spices. Cook, scraping up any browned bits, 2 to 4 min., until fragrant.
- Add ¼ cup water, 1 tbsp butter (double both for 4 portions), the demi-glace and remaining ketchup.
- Cook, stirring often, 1 to 2 min., until thickened.
- Divide the mash and patties between your plates
- Top the patties with the peas and gravy. Bon appétit!
