  • 100g Radishes

  • 2 Cucumbers

  • 30ml Red wine vinegar

  • 120g Hummus

  • 2 Pita

  • 4g Red Ras el Hanout (paprika, cumin, ginger, coriander, turmeric, cinnamon, fennel seed, nutmeg, cardamom, allspice, black pepper, caraway, galangal, cloves, mace, rose petals, lavender, bay leaf, saffron)

Step 1: Mise en place
  • Preheat the oven to 450°F.
  • Small-dice the cucumbers.
  • Thinly slice the radishes.
  • Stack and cut the pita into 6 wedges.

Step 2: Cook the beef
  • In a large pan, heat a drizzle of oil on medium-high.
  • Add the beef*; season with ¾ of the red ras el hanout and S&P.
  • Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.

Step 3: Make the pita chips
  • Meanwhile, on a lined sheet pan, toss the pita with a drizzle of olive oil and S&P.
  • Toast in the oven, flipping halfway, 5 to 7 min., until golden brown and crispy.

Step 4: Make the salad
  • Meanwhile, in a medium bowl, combine the cucumbers, radishes, vinegar, a drizzle of olive oil, the remaining red ras el hanout and S&P.

  • Divide the hummus between your plates and spread out in a circular motion.
  • Top with the beef and salad.
  • Garnish with a drizzle of olive oil.
