Welcome to Camp Goodfood! An opportunity for you and your kids to cook together this summer, learning the basics of fave kid meals, like mac ’n’ cheese. Follow along with our video series to build a roux for a homemade classic with cheddar and Grana Padano.

Ingredients
for 4 servings
600g Broccoli florets
30g Panko
340g Cavatappi pasta
90g Grated cheddar
25g Grana Padano (contains rennet)
200ml Milk
20g Tangy Herbs blend (enriched wheat flour, salt, paprika, garlic, onion, red bell pepper, black pepper, sunflower oil, oregano, parsley, chives, mustard)

Recipe Instructions

- Preheat the oven to 450°F.
- Bring a large pot of salted water to a boil.
- On a lined sheet pan, toss the broccoli (halve if large) with a generous drizzle of oil, the panko, ½ the Grana Padano and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender.

- Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.
- Boil, 8 to 10 min., until al dente.
- Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

- Meanwhile, in a large, high-sided pan, heat 3 tbsp butter on medium.
- Add the spices and cook, stirring often, 2 to 3 min., until a paste forms.
- Add the milk and cook, whisking often, 30 sec. to 1 min., until thickened and no lumps remain.
- Add the cheddar and remaining Grana Padano.
- Cook, stirring often, 1 to 2 min., until the cheese has melted; season with S&P.

- To the pan, add the pasta and ½ the reserved cooking water.
- Cook, stirring often, 2 to 3 min., until heated through and combined.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
- Divide the mac ’n’ cheese between your bowls.
- Serve the broccoli on the side. Bon appétit!
