Fragrant with coriander, cumin and turmeric, it binds perfectly with browned ground beef in this alluring platter. Serve the meaty goodness on a layer of delicious hummus, and pop a bright tomato, cucumber and radish salad on top. For a last touch, introduce springy wedges of pita warmed in the oven and destined to scoop up all that comforting goodness.

Mise en place
Preheat the oven to 350°F. Zest and juice the lemon. Small-dice the cucumbers and tomatoes. Medium-dice the radishes. Mince the garlic. Remove the root ends of the scallions; thinly slice, separating the white bottoms and green tops.

Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Sauté the garlic and white bottoms of the scallions, 30 sec. to 1 min., until fragrant. Add the beef*; season with all but a pinch of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until browned and cooked through. Set aside in a warm spot.

Make the salad
In a medium bowl, combine the tomatoes, cucumbers, radishes, up to 1 tbsp lemon juice (double for 4 portions) and the lemon zest. Drizzle with olive oil; season with the remaining spices and S&P. Toss well.

Warm the pita
Warm the pita directly on an oven rack, 1 to 2 min., until soft and pliable. Transfer to a cutting board.

Plate your dish
Divide the hummus between your plates and spread out in a circular motion. Top with the beef and a spoonful of salad. Garnish with the green tops of the scallions and a drizzle of olive oil. Cut the pita into wedges and serve on the side with any remaining salad. Bon appétit!
