with Hummus, Chopped Salad & Pita

Let’s explore new aromas tonight, with a ground beef dinner you’ll spice up with ras el hanout, a terrific Middle Eastern-inspired spice blend, as well as scallions for a punchy combination. You’ll serve the sautéed meat on a bed of hummus and top it with a crisp and colourful tomato, cucumber and radish salad. The final touch comes courtesy of puffy pita wedges, warmed in the oven and perfect for scooping up all that comforting goodness.

Mise en place
Preheat the oven to 350°F. Zest and juice the lemon. Small-dice the cucumbers and tomatoes. Quarter the radishes, discarding the stem ends. Mince the garlic. Cut off and discard the root ends of the scallions; thinly slice, separating the white bottoms and green tops.

Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the garlic and white bottoms of the scallions. Cook, stirring frequently, 30 seconds to 1 minute, until fragrant. Add the ground beef*; season with all but a pinch of the ras el hanout and S&P. Cook, breaking up the meat with a spoon, 4 to 6 minutes, until browned and cooked through. Transfer to a bowl and set aside in a warm spot.

Make the salad
While the beef cooks, in a bowl, combine the tomatoes, cucumbers, radishes, up to 1 tbsp of the lemon juice, to taste (double for 4 portions), and as much of the lemon zest as you’d like. Drizzle with olive oil; season with the remaining pinch of ras el hanout and S&P. Toss well.

Toast the pita
Place the pita directly on the oven rack for 2 to 3 minutes, until warm and soft. Transfer to a dry cutting board and cut into wedges.

Plate your dish
Divide the hummus between your plates and spread it out in a circular motion. Top the hummus with the cooked beef and salad. Garnish with as many of the green tops of the scallions as you’d like and a drizzle of olive oil. Serve the toasted pita and any remaining salad on the side. Bon appétit!
