  • 15ml Minced garlic

  • 90g Radishes (or French radishes)

  • 1 Lime

  • 1 Poblano pepper (or green pepper)

  • 60g Grated Oaxaca cheese

  • 12 Wheat flour tortillas

Step 1: Cook the beef & poblano
Preheat the oven to 450°F. Halve and core the poblano lengthwise; thinly slice crosswise. In a large pan, heat a drizzle of oil on medium-high. Sauté the garlic, 30 sec. to 1 min., until fragrant. Add the beef and poblano; season with all but a pinch of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until the beef* is cooked through and the poblano has softened.

Meanwhile, stack and tightly wrap the tortillas in aluminium foil. Bake directly on an oven rack, 6 to 8 min., until heated through. Keep wrapped until ready to serve.

Meanwhile, juice the lime. Thinly slice the radishes. In a large bowl, combine the lime juice, a drizzle of oil, the remaining spices and S&P. Add the radishes and carrots; toss well.
