That’s a salad of tastiness! In this carb-conscious recipe, the salad is such a stunner that it almost steals the show. It’s made from sharp and sweet slices of apple, along with morsels of kale and cabbage (both conveniently pre-chopped, because you deserve it). Once you work in our honey-Dijon vinaigrette and top it with toasted and ever-so-lightly salted walnuts, the only thing those spiced, pan-seared chicken breasts have to do is show up on time.

  • 200g Shredded red cabbage

  • 100g Chopped kale

  • 1 Apple

  • 60ml Sweet, Savoury Honey-Dijon vinaigrette

Spiced Chicken Breasts - Step #1 Toast the walnuts
Step 1: Toast the walnuts
In a medium pan, heat a drizzle of oil on medium. Roughly chop the walnuts. Toast, stirring frequently, 30 sec. to 1 min., until lightly browned and fragrant; season with a pinch of salt. Transfer to a paper towel-lined bowl. Wipe out and reserve the pan.

Step 2: Cook the chicken
In the same pan, heat a drizzle of oil on medium-high. Pat the chicken* dry with paper towel; season with the spices and S&P. Cook, partially covered, 6 to 8 min. per side, until cooked through. Transfer to a cutting board and let rest for 5 min. before slicing against the grain.

Step 3: Make the salad
Meanwhile, halve, core and thinly slice the apple. In a large bowl, combine the kale, cabbage and vinaigrette. Massage the kale and cabbage, 1 to 2 min., until softened. Add the apple, walnuts and S&P; toss well.
