When it comes to family dinner, cooking with one pot is like hitting the jackpot. It streamlines the whole process, from prep to post-meal cleanup. This charming pasta soup scores high with its nibbles of chubby three-cheese fresh tortellini. They’re surrounded by half-moons of zucchini and strips of leafy green kale, anchored by diced carrots and onions. Keeping it all afloat is a tomato and veggie demi-glace broth, scented with black olives, peppers and lemony herbs.

Mise en place
Halve the zucchini lengthwise; thinly slice.

Sauté the vegetables
Peel and small-dice the carrots. In a large pot, heat a generous drizzle of oil on medium-high. Sauté the carrots and onions, 2 to 4 min., until beginning to soften. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the zucchini and sauté, 2 to 3 min., until beginning to soften; season with ½ the spices.

Make the broth
To the pot of vegetables, add the tomato sauce, demi-glace, 5 cups water, the remaining spices, 1 tsp salt and pepper; bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, 3 to 4 min., until slightly reduced.

Make the soup
Add the pasta to the pot of broth; stir gently to separate. Bring to a boil, stirring occasionally, 4 to 6 min., until al dente. In the final 2 min., add the kale and S&P; stir well.

Plate your dish
Divide the soup between your bowls. Garnish with a drizzle of olive oil and freshly cracked black pepper. Bon appétit!
