Quick Cheesy Ground Beef & Zucchini Naan Pizzas
Baby Greens Salad with Honey-Dijon Vinaigrette
A little pizza goes a long way—even better when it arrives in a short time. These individually portioned pies are built on rounds of spongy naan bread, and laden with rib-sticking ingredients. Brown up a helping of ground beef along with bite-size pieces of zucchini and garlic, and top with grated mozzarella for a cheesy oven finish. Tossing baby greens with our enticingly sweet honey-Dijon vinaigrette is the fastest side salad in the book.

- 180g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 2 Zucchini (green, yellow or heirloom)
- 60ml Sweet, Savoury Honey-Dijon vinaigrette

- 4 Naan

Preparation

Cook the beef & zucchini
Preheat the oven to broil. Quarter the zucchini lengthwise; thinly slice. In a large pan, heat a drizzle of oil on medium-high. Sauté the garlic, 30 sec. to 1 min., until fragrant. Add the beef and zucchini; season with the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until the zucchini have softened and the beef* is cooked through.

Coat the beef & zucchini
To the pan of beef and zucchini, add the demi-glace and 1 tbsp water. Cook, stirring frequently, 1 to 2 min., until coated and slightly thickened.

Assemble & bake the pizzas
Arrange the naan on a lined sheet pan. Top with the beef and zucchini. Sprinkle with the cheese. Broil, 2 to 4 min., until warmed through and beginning to crisp.

Make the salad
Meanwhile, in a large bowl, combine the baby greens, vinaigrette and S&P.

Plate your dish
Divide the pizzas (cut into wedges if desired) between your plates. Serve the salad on the side. Bon appétit!
