The pork, along with pan-blistered cherry tomatoes, zucchini and delicate beads of orzo, gets a showering of fresh lemon juice and a fling of feta cheese to finish.

  • 140g Cherry tomatoes

  • 15ml Minced garlic

  • 1 Lemon

  • 200g Zucchini half-moons

  • 142g Orzo

Step 1: Boil the orzo
Bring a medium pot of salted water to a boil. Boil the orzo, 10 to 14 min., until just tender. Drain and rinse under running water. Return to the pot and toss with a drizzle of oil to prevent sticking.

Step 2: Cook the pork
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the pork* and ½ the garlic; season with ½ the spices and S&P. Cook, flipping halfway, 4 to 6 min., until browned and cooked through. Transfer to a plate and keep warm. Wipe out and reserve the pan.

Step 3: Sauté the vegetables
In the same pan, heat a drizzle of oil on medium-high. Sauté the zucchini, tomatoes and remaining garlic, 4 to 6 min., until the zucchini is tender and the tomatoes begin to burst; season with the remaining spices and S&P.

Step 4: Combine the orzo
Quarter the lemon. To the pan of vegetables, add the orzo, pork and juice of ½ the lemon wedges. Cook, stirring frequently, 1 to 2 min., until warmed through and combined.

Divide the orzo between your plates. Garnish with the cheese and a drizzle of olive oil. Serve the remaining lemon wedges on the side. Bon appétit!
