When you hear al pastor, you think tacos, right? (And then your mouth waters.) We’re reformulating those fabulous flavours into a format fit for a burger. Get your ground pork patties going with our Hot & Smoky Paprika spice blend, and slap them down on the grate. They’ll head for burger buns with a swipe of scallion-sharpened mayo, lettuce and a stunning little salsita made of small-diced grilled zucchini and quick-pickled peach. Bonus points: recombine these elements into a nifty side salad.

  • 450g Potatoes

  • 1 Scallion

  • 2 Zucchini (green, yellow or heirloom)

  • 1 Artisan lettuce

  • 1 Peach

  • 60ml Mayonnaise

  • 15ml Apple cider vinegar

  • 2 Classic hamburger buns

  • 9g Hot & Smoky Paprika spices (smoked paprika, sweet paprika, onion, chili powder, kosher salt)

Pork Burgers Al Pastor with Zucchini & Peach Salsita - Step #1 Roast the potatoes
Step 1: Roast the potatoes
Preheat the oven to 450°F. Heat the BBQ on high, making sure to oil the grill first. Cut the potatoes lengthwise into ½ inch wedges. On a lined sheet pan, toss with a drizzle of oil, ⅔ of the spices and S&P. Roast, flipping halfway, 20 to 25 min., until browned and tender.

Step 2: Mise en place
Meanwhile, cut the zucchini lengthwise into ½ inch pieces. Thinly slice the scallion, separating the white bottom and green top. Halve, pit and small-dice the peach. Separate the lettuce leaves; tear the leaves. In a small bowl, combine the mayo, green top of the scallion and S&P. In a medium bowl, combine the peach, a splash of the vinegar and ⅓ of the white bottom of the scallion.

Step 3: Prepare & grill the patties
In a large bowl, combine the pork, remaining white bottom of the scallion and spices, and S&P. Form into 2 patties* (double for 4 portions). Grill on the BBQ (or in a grill pan heated with a drizzle of oil on medium-high), 5 to 7 min. per side, until cooked through.

Step 4: Grill the zucchini
Meanwhile, in a second large bowl, combine the zucchini, a drizzle of oil and S&P. Grill on the BBQ (or in a second grill pan heated on medium-high), 2 to 4 min. per side, until nicely charred. Transfer to a cutting board and reserve the grill pan, if using. Reserve the bowl.

Step 5: Toast the buns & make the salsita
Toast the buns, cut-sides down, on the BBQ (or in the reserved grill pan heated with a drizzle of oil on medium-high), 1 to 2 min., until warmed through. Transfer to a plate. Small-dice ½ the zucchini. To the bowl of peach, and the diced zucchini, a drizzle of olive oil and S&P; toss well.

Step 6: Plate your dish
Divide the bun bottoms and potatoes between your plates. Top each bun bottom with the scallion mayo, a patty, the zucchini slices, a spoonful of the salsita, a handful of lettuce and a bun top. In the reserved bowl, make the salad by combining the remaining lettuce, vinegar and salsita, and a small pinch of S&P. Serve the salad on the side. Bon appétit!
