With minimal effort, you’ll be feasting on fresh noodles tossed in a tangy soy and peanut butter sauce.   • 15ml Minced garlic

  • 340g Baby bok choy

  • 2 Scallions

  • 225g Sliced mushrooms

  • 30ml Rice vinegar

  • 30ml Mirin

  • 30g Peanut butter

  • 225g Fresh ramen noodles

  • 30ml Soy sauce (low sodium)

  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Step 1: Boil the noodles
Bring a large pot of salted water to a boil. Add the noodles; stir gently to separate. Boil, 1 to 3 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot. Toss with a drizzle of oil to prevent sticking.

Meanwhile, thinly slice the scallions, separating the white bottoms and green tops. Remove the root ends of the bok choy; separate the leaves.

Step 3: Sauté the vegetables
In a large pan, heat a drizzle of oil on medium-high. Add the white bottoms of the scallions and mushrooms. Sauté, 4 to 5 min., until lightly browned. Add the bok choy and sauté, 2 to 3 min., until tender; season with ½ the spices.

Meanwhile, in a small bowl, whisk the peanut butter, vinegar, mirin, soy sauce, garlic, ½ the reserved cooking water and the remaining spices.

Heat the pot of noodles on medium-high. Add the vegetables and sauce. Cook, stirring frequently, 1 to 2 min., until reduced and combined; season with S&P. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
