Boil the noodles
Bring a large pot of salted water to a boil. Add the noodles, separating the strands as you add them. Boil, 1 to 3 min., stirring frequently. Reserving ½ cup cooking water (double for 4 portions), drain and return to the pot. Toss with a drizzle of oil to prevent sticking.

Mise en place
Remove the root ends of the scallions; thinly slice, separating the white bottoms and green tops. Remove the bottom ¼ inch of the bok choy; separate the leaves.

In a large pan, heat a drizzle of oil on medium-high. Sauté the white bottoms of the scallions and mushrooms, 4 to 5 min., until lightly browned. Add the bok choy and sauté, 2 to 3 min., until wilted; season with ½ the spices.
