Serve up a delicious dose of nostalgia tonight with meatloaf and mash, done the carb-conscious way. Rather than one big loaf, you’ll make adorable individual-sized ground beef meatloaves, starting them on the stovetop and finishing them under the broiler with a glaze of flavour-packed BBQ sauce. Get an upgrade on regular tater mash with sweet potato, which offers velvety sweet depth. Add a generous portion of roasted broccoli, and in under a half-hour, you’ve improved on a dinnertime classic.

Preparation

Make the mash
Preheat the oven to 450°F. Bring a medium pot of salted water to a boil. Add the sweet potatoes to the pot of boiling water and boil, 14 to 16 minutes, until very tender when pierced with a fork. Reserving ½ cup cooking water (double for 4 portions), drain the potatoes and return to the pot. Off the heat, add 2 tbsp butter (double for 4 portions). Using a fork (or potato masher), mash the mixture, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P and set aside in a warm spot.

Roast the broccoli
While the sweet potatoes boil, on a lined sheet pan, toss the broccoli with a drizzle of oil; season with ⅓ of the spice blend and S&P to taste. Toss to coat and arrange in a single, even layer. Roast in the oven, flipping halfway through, 14 to 18 minutes, until tender when pierced with a fork.

Prepare & cook the meatloaves
In a large bowl, combine the ground beef, panko, onions, garlic and ½ the BBQ sauce; season with ½ the remaining spice blend and S&P. Divide and shape the mixture into 2 small loaves of equal size (double for 4 portions). In a medium oven-safe pan, heat a drizzle of oil on medium-high. Add the mini meatloaves* to the pan and cook, partially covered, 5 to 7 minutes per side, until browned and cooked through.

Finish & serve
When the broccoli have finished roasting, remove from the oven and set aside in a warm spot. Switch the oven to broil. Brush the remaining BBQ sauce over the meatloaves and season with the remaining spice blend. Broil the meatloaves, 2 to 3 minutes, until the BBQ sauce has browned. Divide the finished mash and roasted broccoli between your plates. Top the mash with the mini meatloaves. Bon appétit!
