Behold the power of the one-pan recipe! Feel the speed of the 10-minute meal! And before you know it, the fam will be appreciating all the pleasures of fresh pasta (while basking in the knowledge that there are minimal dishes to be done). Crisped cubes of pancetta are the first to cook up. Into the porky fond, you’ll throw diced zucchini, followed by pre-chopped kale. The macaroni cooks in the same pan along with a liberal pour of cream and grated white cheddar.

  • 15ml Minced garlic
  • 2 Zucchini
  • 100g Chopped kale
  • 60ml Vegetable demi-glace
  • 450g Fresh macaroni
  • 120ml Heavy cream
  • 120g Grated cheddar
  • 10g Old Country spices (garlic, onion, mustard, kosher salt, black pepper)

Cook the pancetta
In a large, high-sided pan, heat a drizzle of oil on medium-high. Cook the pancetta*, stirring frequently, 2 to 3 min., until golden brown and crispy. Transfer to a paper-towel lined plate, leaving any drippings in the pan. Return the pan to the heat.

Meanwhile, small-dice the zucchini.

Combine & cook the pasta
To the pan of drippings, add the zucchini. Sauté, 1 to 2 min., until beginning to soften; season with S&P. Add the kale and garlic. Sauté, 1 to 2 min., until wilted; season with ⅓ of the spices and S&P. Add the pasta, cream, demi-glace, 2 cups water, the remaining spices and S&P. Boil, stirring occasionally, 3 to 4 min., until the pasta is al dente. Add the cheese and cook, stirring frequently, 1 to 2 min., until combined.

Plate your dish
Divide the pasta between your bowls. Garnish with the pancetta. Bon appétit!
