Richly flavoured with Mediterranean-inspired spices, a generous portion of ground beef lays down a hearty foundation, to which you’ll bring a bounty of vegetables. Pan-popped cherry tomatoes, pre-chopped kale and our roasted peppers add volume and hits of freshness to the mix. Finish the dish with cubes of feta cheese, and slip a balsamic-dressed salad in on the side.

  • 280g Cherry tomatoes

  • 15ml Minced garlic

  • 100g Chopped kale

  • 30ml Rich, Snappy Whipped Balsamic vinaigrette

  • 30g Vegetable demi-glace

  • 2 Roasted peppers

  • 45g Feta

  • 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Step 1: Start the stir-fry
In a large pan, heat a drizzle of oil on medium-high. Add the beef and garlic; season with ½ the spices and S&P. Cook, breaking up the meat, 3 to 4 min., until partially cooked. Add ⅔ of the tomatoes and cook, stirring occasionally, 1 to 3 min., until the tomatoes begin to burst and the beef* is cooked through.

Meanwhile, medium-dice the roasted peppers. Halve the remaining tomatoes.

To the pan of beef and tomatoes, add the demi-glace, ½ the kale, ½ the roasted peppers, ¼ cup water (double for 4 portions), the remaining spices and S&P. Cook, stirring occasionally, 3 to 4 min., until the kale has wilted.

Meanwhile, in a medium bowl, combine the remaining kale, a drizzle of olive oil and S&P. Massage the kale, 1 to 2 min., until softened. Add the halved tomatoes, remaining roasted peppers and the vinaigrette; toss well.
