with Crunchy Roasted Cashews
Let’s go keto, let’s go! You don’t have to be following this low-carb, pro-meat diet to enjoy a fun riff on eggrolls. The Chinese restaurant faves are liberated from their wrappers, but all the elements are there to dig into. Softened with a quick sauté, shreds of green cabbage and carrots join bok choy leaves for the signature veggie crunch. Nubs of browned ground pork, a whiff of sesame oil and crunchy roasted cashews roll out the satisfaction.

- 150g Shredded green cabbage
- 100g Matchstick carrots
- 225g Baby bok choy
- 1 Scallion
- 15ml Toasted sesame oil
- 25g Roasted cashews
- 30ml Soy sauce (low sodium)
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Preparation

Mise en place
Remove the root ends of the bok choy; separate the leaves. Thinly slice the scallion, separating the white bottom and green top.

Cook & coat the pork
In a large pan, heat a drizzle of oil on medium-high. Add the pork* and cook, breaking up the meat, 4 to 6 min., until browned and cooked through; season with ⅔ of the spices and S&P. Add the soy sauce; stir well. Transfer to a bowl and keep warm, leaving any browned bits in the pan. Reserve the pan.

Sauté the vegetables
In the same pan, heat the sesame oil on medium-high. Add the white bottom of the scallion and sauté, 30 sec. to 1 min., until fragrant. Add the cabbage, bok choy and carrots. Sauté, scraping up any browned bits from the bottom of the pan, 2 to 3 min., until wilted; season with the remaining spices and S&P.

Finish & serve
Roughly chop the cashews. Divide the pork and vegetables between your bowls. Garnish with the cashews and green top of the scallion. Bon appétit!
