with Chopped Salad & Crispy Potato Rounds
Take a big, satisfying bite out of the week with these hearty turkey kefta sandwiches made in a mere half-hour. The kids will adore these wholesome excuses to eat with their hands! Each puffy pita is stuffed with a browned kefta patty bursting with flavour thanks to cubes of feta and a medley of Middle Eastern-inspired herbs. You’ll load on crunchy chopped salad and a dollop of creamy hummus. A side of roasted baby potato rounds adds extra brownie points.

Preparation

Roast the potatoes
Preheat the oven to 450°F. Thinly slice the potatoes crosswise into ¼ inch rounds. On a lined sheet pan, toss the potatoes with a generous drizzle of oil; season with S&P. Arrange in a single, even layer and roast in the oven, flipping halfway through, 22 to 24 minutes, until golden brown.

Mise en place
While the potatoes roast, zest and juice the lemon. Small-dice the cucumbers. Small-dice the tomatoes. In a medium bowl, make the chopped salad by combining the cucumbers, tomatoes, ⅔ of the lemon juice and 3 tbsp olive oil; season with S&P.

Prepare & cook the kefta patties
In a large bowl, combine the ground turkey, feta, remaining lemon juice and as much lemon zest as you’d like; season with the spice blend and S&P. Gently mix to combine and form into 4 patties of equal size. In a large pan, heat a drizzle of olive oil on medium-high. Add the patties* and cook, 3 to 5 minutes per side, until cooked through.

Warm the pita
Place the pita directly on the oven rack and heat, 3 to 5 minutes, until warmed through. Transfer to a cutting board.

Finish & serve
Cut off the top ¼ of each pita to open the pita pocket and reserve for a snack or another recipe. Fill each pita pocket with a cooked patty, a spoonful of hummus and a spoonful of chopped salad. Divide the kefta pita sandwiches and crispy potato rounds between your plates. Serve any remaining chopped salad and hummus on the side. Bon appétit!
