Crisp Radish & Cucumber Salad
Hey good lookin’, whatcha got kuchen? A specialty of the French-German borderlands, flammkuchen tastes as good as it looks. Our streamlined version owes its rich, tongue-tingling flavour to hearty nuggets of browned ground pork, the savoury sweetness of caramelized onions and a double dairy topping (cream cheese and mozzarella for extra richness). Set off your oven-crisped rounds of naan with a refreshing Dijon-tinged side salad combining baby greens, radishes and cucumber.

- 100g Radishes (or French radishes)
- 120g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 1 Cucumber
- 60ml Sweet, Savoury Honey-Dijon vinaigrette
- 50g Caramelized onions
- 60g Cream cheese
- 60g Grated mozzarella
- 2 Naan
- 10g Old Country spices (garlic, onion, mustard, kosher salt, black pepper)

Preparation

Cook the pork
Preheat the oven to 450°F. In a large pan, heat a generous drizzle of oil on medium-high. Add the pork*; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until browned and cooked through. Add the onions; stir well.

Mise en place
Meanwhile, thinly slice the radishes and cucumber.

Prepare & bake the flammkuchen
Arrange the naan on a lined sheet pan and toast in the oven, 2 to 3 min., until warmed through. Remove from the oven and switch the oven to broil. Spread the naan with the cream cheese and sprinkle with the remaining spices. Top with the pork and mozzarella. Broil, 1 to 2 min., until the cheese has melted.

Make the salad
Meanwhile, in a medium bowl, combine the baby greens, cucumber, radishes and vinaigrette.

Plate your dish
Divide the flammkuchen (cut into wedges if desired) between your plates. Serve the salad on the side. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
