Taquitos are a Mexican-inspired dish in which tortillas are wrapped around a savoury filling to form enclosed tacos. We stuff the tortillas with a combination of ground beef, zucchini, scallions and tomato paste. Once assembled, they’re topped with generous handfuls of shredded cheddar and baked until golden perfection. A tomato and cucumber salsa accompanies these delectable rolls for a touch of freshness.

Mise en place
Preheat the oven to 425°F. Grate the zucchini. Zest and juice the lime. Cut off and discard the root ends of the scallions; thinly slice, separating the white bottoms and green tops. Small-dice the tomatoes. Small-dice the cucumber.

Cook the filling
In a large, high-sided pan, heat a drizzle of oil on medium-high. Add the ground beef*; season with S&P. Cook, breaking up the meat with a spoon, 4 to 6 minutes, until just cooked through. Transfer to a bowl. Add the zucchini to the pan; cook, stirring occasionally, 4 to 5 minutes, until most of the liquid from the zucchini has evaporated. Return the cooked beef to the pan and add the white bottoms of the scallions and tomato paste; season with all but a generous pinch of the spice blend and S&P. Cook, stirring frequently, 2 to 3 minutes, until the flavours have combined.

Assemble & bake the taquitos
Drizzle a lined sheet pan with oil. Place the tortillas on a clean work surface. Divide the filling between the tortillas; tightly roll up each tortilla around the filling. Place on the sheet pan, seam-sides down; top with the cheddar. Bake in the oven, 10 to 12 minutes, until the cheese has melted and the taquitos are golden brown. Let stand for at least 2 minutes before serving.

Make the salsa & spiced yogurt
In a medium bowl, make the salsa by combining the cucumber, tomatoes, as many green tops of the scallions as you’d like and the lime juice. Drizzle with oil and season with S&P. Toss well. In a small bowl, make the spiced yogourt by mixing the yogurt and as much of the lime zest as you’d like; season with the remaining spice blend and S&P.

Plate your dish
Divide the finished taquitos between your plates. Top with the cucumber-tomato salsa. Serve the spiced yogurt on the side. Bon appétit!
