Get a Korean BBQ vibe going in your very own kitchen! Our take on the traditional bulgogi recipe will have you sautéing ground beef, as well as sweet pepper and green cabbage, with an intoxicating mix of scallion, ginger and sweet soy sauce. It’s all destined to be served with a mound of steaming jasmine rice. For an added bonus, you’re marinating thinly sliced cucumber in rice vinegar for a sharp garnish.

  • 1 Bunch of cilantro

  • 1 Scallion

  • 1 Cucumber

  • 1 Sweet pepper

  • 200g Shredded green cabbage

  • 20g Ginger

  • 157g Jasmine rice

  • 30ml Rice vinegar

  • 45ml Sweet soy sauce

  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Ground Beef Bulgogi Bowls - Step #1 Cook the rice
Step 1: Cook the rice
In a medium pot, combine the rice, 1 ½ cups water (double for 4 portions) and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Add ½ the vinegar. Fluff and set aside in a warm spot.

Step 2: Mise en place
Meanwhile, peel and mince the ginger. Remove the root end of the scallion; thinly slice, separating the white bottom and green top. Thinly slice the cucumber into rounds; toss with the remaining vinegar and set aside to marinate. Core and thinly slice the sweet pepper lengthwise. Roughly chop the cilantro leaves and stems.

Step 3: Sauté the vegetables
In a large pan, heat a drizzle of oil on medium-high. Sauté the sweet pepper and cabbage, 2 to 3 min., until beginning to soften. Transfer to a bowl. Wipe out and reserve the pan.

Step 4: Cook the beef
In the same pan, heat a drizzle of oil on medium-high. Sauté the white bottom of the scallion and ginger, 1 to 2 min., until fragrant. Add the beef*; season with the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until browned and cooked through. Add the soy sauce and 2 tbsp water (double for 4 portions). Bring to a boil and cook, stirring frequently, 1 to 2 min., until the sauce has thickened and the beef is coated.

Step 5: Finish & serve
To the pan of beef, add the vegetables and cilantro; toss well. Divide the rice and beef mixture between your bowls. Top with the cucumber. Garnish with the green top of the scallion. Bon appétit!
