A vibrant side salad of cucumbers, diced tomatoes, shallot and fresh dill is dressed in a tangy cider vinaigrette. Pan-seared ground beef meatballs become browned beauties as they cook, ready to take their rightful place atop multicoloured pearl couscous. Creamy tzatziki and wispy specks of dill draw all the hues and aromas together.

  • 1 Bunch of dill

  • 2 Cucumbers

  • 2 Tomatoes

  • 1 Shallot (or onion)

  • 15ml Apple cider vinegar

  • 30g Vegetable demi-glace

  • 165g Multicoloured pearl couscous

Step 1: Boil the couscous
Bring a medium pot of salted water to a boil. Add the couscous and demi-glace; stir gently to separate. Boil, 8 to 12 min., until tender. Drain the couscous and rinse under cold water. Transfer to a bowl, season with S&P and toss with a drizzle of oil to prevent clumping. Set aside in a warm spot.

Step 2: Mise en place
While the couscous boils, halve the cucumbers lengthwise; thinly slice crosswise. Medium-dice the tomatoes. Peel and halve the shallot; mince ½ and thinly slice the remaining ½. Mince the garlic. Pick the dill fronds off the stems; finely chop the fronds.

Step 3: Prepare & cook the meatballs
In a medium bowl, combine the beef, minced shallot, garlic and ⅓ of the dill; season with ¾ of the spices and S&P. Gently mix to combine. Form the mixture into 10 meatballs* (double for 4 portions) about the size of a golf ball. In a large pan, heat a drizzle of oil on medium-high and cook, partially covered, turning over occasionally, 9 to 11 min., until browned on all sides and cooked through.

Step 4: Make the tomato-cucumber salad
While the meatballs cook, in a large bowl, combine the vinegar and 1 tbsp olive oil (double for 4 portions); season with the remaining spices and S&P. Add the cucumbers, tomatoes, sliced shallot and ½ the remaining dill. Toss well.

Step 5: Plate your dish
Divide the couscous between your bowls. Top with the salad and meatballs. Garnish with the remaining dill. Serve the tzatziki (season with pepper if desired) on the side. Bon appétit!
