Greek-Spiced Ground Beef & White Bean Pita
with Crisp Radish, Cuke & Tzatziki Salad
Go Greek this week, and go quick! With 10 minutes of cooking time, you’ll be sitting down to an aromatic meal built on warm, open-faced pita. Each bread is loaded with a double dose of nourishment from spiced ground beef and white beans (with a hidden veggie component from our broccoli ‘rice’). While cool cucumbers and crisp radishes, creamy with tzatziki, have the zing to make each serving sing.

- 15ml Minced garlic
- 90g Sliced radishes
- 1 Celery stalk
- 1 Cucumber
- 200g Broccoli ‘rice’ (chopped broccoli)
- 30ml Sweet Cider vinaigrette
- 540ml White kidney beans (canned)
- 60g Garlic-cucumber yogurt (tzatziki)
- 4 Pita
- 7g Paprika & Oregano spices (garlic, paprika, beef bouillon, salt, onion, oregano, black pepper, sunflower oil, thyme, parsley, cinnamon, nutmeg)

Preparation

Cook the beef
Thinly slice the celery. In a large pan, heat a drizzle of oil on high. Add the beef; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 1 to 2 min., until beginning to brown. Add the celery, garlic and broccoli rice. Cook, stirring occasionally, 3 to 4 min., until the beef* is cooked through and the celery has slightly softened.

Cook the kidney beans
Meanwhile, drain and rinse the kidney beans. Reduce the pan of beef to medium-high. Add the kidney beans and cook, stirring occasionally, 1 to 2 min., until combined; season with S&P. Add the vinaigrette and cook, stirring constantly, 30 sec. to 1 min., until coated.

Make the salad
Meanwhile, quarter the cucumber lengthwise; slice crosswise into ¼ inch pieces. In a medium bowl, combine the cucumber, radishes, ¼ of the tzatziki, 1 tsp water (double for 4 portions), the remaining spices and S&P.

Warm the pita
Wrap the pita in slightly dampened paper towel. On a large plate, microwave, in 5 sec. increments, until just warm.

Plate your dish
Divide the pita between your plates. Top with the beef and kidney beans. Garnish with the salad and remaining tzatziki. Bon appétit!
