Tofu, prepare for total transformation! Here’s the multi-layered technique that gets it there: slice it on the diagonal, dunk it into a blend of mayo and BBQ sauce, and dredge it in panko for a crispy outer coating. Fried to golden, it’s some of the best breaded bean curd you’ll ever sample. In a nod to Southern-style cooking, the ‘dirty rice’ is stained with a paprika-driven spice blend and dotted with sweet pepper and leeks. Garlic-sautéed kale makes a great green side.

  • 1 Garlic clove

  • 1 Sweet pepper

  • ½ Bunch of kale

  • 100g Sliced leeks

  • 1 Block of tofu (non-GMO)

  • 165g White rice

  • 57g Panko

  • 30ml Mayonnaise

  • 60ml Vegetable demi-glace

  • 15ml BBQ sauce

  • 7.5g Paprika Two Ways spices (sweet paprika, smoked paprika, garlic, onion, oregano, black pepper, kosher salt)

Crispy BBQ Tofu - Step #1 Mise en place
Step 1: Mise en place
Core and small-dice the sweet pepper. Remove the kale leaves from the stems; roughly chop the leaves. Mince the garlic. Pat the tofu dry with a paper towel; cut into ½ inch pieces lengthwise. Halve diagonally to create triangles; season with ½ the spices and S&P.

Step 2: Cook the rice
In a medium pot, heat a drizzle of oil on medium. Sauté the sweet pepper and ⅔ of the leeks, 1 to 2 min., until fragrant. Add the rice, ½ the demi-glace, 1 ¼ cups water (double for 4 portions), the remaining spices and a pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff and set aside in a warm spot.

Step 3: Prepare & fry the tofu
In a medium bowl, combine the mayo and BBQ sauce. In a second medium bowl, add the panko. Working one piece at a time, coat the tofu in the BBQ mixture (letting any excess drip off), then in the panko (pressing to adhere). In a large pan, heat a thin layer of oil on medium-high. Working in batches, fry the tofu, 2 to 3 min. per side, until browned and crispy. Transfer to a paper towel-lined plate; season with salt. Wipe out and reserve the pan.

Step 4: Wilt the kale
In the same pan, heat a drizzle of olive oil on medium-high. Sauté the garlic and remaining leeks, 1 to 2 min., until fragrant. Add the kale and remaining demi-glace. Sauté, 2 to 3 min., until the kale has wilted and the demi-glace is reduced.
