Here’s the multi-layered technique that gets it there: slice it on the diagonal, dunk it into a blend of mayo and BBQ sauce, and dredge it in panko for a crispy outer coating. Fried to golden, it’s some of the best breaded bean curd you’ll ever sample. In a nod to Southern-style cooking, the ‘dirty rice’ is stained with a paprika-driven spice blend and dotted with sweet pepper and leeks. Garlic-sautéed kale makes a great green side.
