Get a good start on BBQ season! Take your burgers deep into the yum zone with a host of Italian accents. Season the ground beef patties with fresh garlic and peppery spices before they hit the grill for browning. Then it’s all about great choices: pillowy bocconcini for cheese, pesto-pumped aioli in lieu of regular mayo, plus thick-sliced tomato and greens. As for those home-baked potato fries, the only choice is to say yes (or sì, if you wish).

Preparation

Roast the fries
Preheat the oven to 425°F. Cut the potatoes into fries, leaving the skin on. On a lined sheet pan, toss the fries with a generous drizzle of olive oil; season with ⅓ of the spice blend and S&P. Arrange in a single, even layer and roast, stirring halfway through, 25 to 30 minutes, until lightly browned and tender when pierced with a fork.

Mise en place
While the fries roast, slice the tomato crosswise. Slice the bocconcini crosswise. Mince the garlic. In a small bowl, make the pesto aioli by combining the mayonnaise, pesto and ¼ of the garlic; season with S&P to taste.

Prepare the patties
In a large bowl, combine the ground beef and remaining garlic; season with the remaining spice blend and S&P. Gently mix to combine. Using your hands, form the mixture into 4 patties of equal size.

Cook the patties
Heat the BBQ on high, making sure to oil the grill first. Place the patties* on the BBQ (or in a grill pan drizzled with oil on medium) and cook, 3 to 5 minutes per side, until cooked through. Top with the bocconcini. Close the BBQ lid (or cover the grill pan, if using) and cook, 1 to 2 minutes, until the cheese has softened. Transfer to a plate (reserving the pan, if using).

Toast the buns & serve
Drizzle the inside of the buns with olive oil. Place the buns on the BBQ, cut-sides down (or in the reserved pan, on medium-high), and toast, 1 to 2 minutes, until golden brown. Spread the pesto aioli on the bun bottoms and tops. Top each bun bottom with a cooked patty, equal portions of tomato and baby greens, and a bun top. Divide the finished burgers and fries between your plates. Bon appétit!
