Butternut Squash & Kale Pizza
with Walnuts, Cream Cheese & Maple Syrup
Huzzah for vegetarian pizza! When the ingredients are pre-chopped and the dough is ready to roll (literally), it’s about as effortless as it gets. You’ll get the crust a’ crisping in the oven, pulling it out partway through the baking process to apply the toppings. Spread it with cream cheese, and top it with butter-softened cubes of squash and morsels of kale, sautéed with garlic and onions. A shower of toasted walnuts and a drizzle of maple syrup are a special finale.

Preparation

Mise en place
Preheat the oven to 450°F. Set the dough aside to come up to room temperature. Grate the garlic.

Sauté the vegetables
In a large pan, heat 2 tbsp butter (double for 4 portions) on medium. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the squash and onions. Sauté, 3 to 5 min., until beginning to soften. Add the kale and sauté, 2 to 3 min., until the squash is tender and the kale has wilted; season with ½ the spices and S&P. Transfer to a bowl. Wipe out and reserve the pan.

Start the pizza
On the back of a well-oiled sheet pan, roll or stretch the dough out to a ½ inch thickness for a thick crust or ⅛ inch for a thin crust. Bake, 12 to 14 min., until partially cooked.

Toast the walnuts
Meanwhile, in the reserved pan, heat 1 tbsp butter (double for 4 portions) on medium. Add the walnuts and toast, stirring frequently, 2 to 3 min., until lightly browned and fragrant. Transfer to a small bowl.

Finish the pizza
When the dough is partially cooked, remove from the oven and spread with the cream cheese. Top with the vegetables and remaining spices. Bake, 4 to 6 min., until the dough is golden brown.

Finish & serve
Transfer the pizza to a cutting board. Drizzle with the maple syrup (start with ½). Cut into wedges. Divide the pizza between your plates. Garnish with the walnuts. Bon appétit!
