with Mushrooms, Olives & Green Pepper

All-dressed is how we like it—our pizza and our skillet dish! So we’re loading on the sautéed mushrooms and green pepper, along with tomato sauce and a good sprinkling of Mediterranean-inspired seasonings. Then, of course, we’re adding sliced black olives and a liberal amount of mozzarella cheese. It all goes into the pan with delectably browned ground pork as the foundation. And it all comes out ready to be served with a salad of baby greens and tomato in a simple vinaigrette.

  • 90g Baby greens (lettuce mix, baby spinach, kale or arugula)
  • 170g Mushrooms
  • 1 Tomato
  • 1 Green pepper
  • 200ml Tomato sauce
  • 30g Black olives
  • 15ml Balsamic vinegar
  • 60g Grated mozzarella
  • 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Mise en place
Thinly slice the mushrooms. Core and medium-dice the green pepper. Thinly slice the olives. Slice the tomato into ½ inch wedges.

Sauté the mushrooms & green pepper
In a large, high-sided, oven-safe pan, heat a drizzle of oil on medium-high. Sauté the mushrooms and green pepper, 2 to 3 min., until slightly softened; season with ⅓ of the spices and S&P. Transfer to a medium bowl and set aside in a warm spot. Reserve the pan.

Cook the pork
Preheat the oven to broil. In the same pan, heat a drizzle of oil on medium-high. Add the pork; season with ½ the remaining spices and S&P. Cook, breaking up the meat, 3 to 5 min., until partially cooked.

Broil the skillet dish
To the pan of pork, add the mushrooms and green pepper, ⅓ of the cheese, the tomato sauce and 2 tbsp water (double for 4 portions); season with the remaining spices and stir well. Top evenly with the remaining cheese. Top the cheese evenly with the olives. Broil, 2 to 3 min., until the cheese has melted and browned and the pork* is cooked through.

Make the salad
In a large bowl, combine the vinegar and 3 tbsp oil (double for 4 portions); season with S&P. Add the tomato and baby greens; toss well.

Plate your dish
Divide the skillet dish and salad between your plates. Bon appétit!
