Carb-Wise: Beef Kefta with Garlic-Tahini Sauce
Za’atar-Roasted String Beans & Radishes
Wha-za’a you’re tasting? That’s right, the delectable medley of sesame, sumac, herbs and spices that is our Za’atar Zone spice blend. It goes deep into the flavour zone in ground beef kefta, made with panko for lightness and a little hit of tahini for moistness. While they brown up in a pan, you’ll get a pretty combo of spiced string beans and radishes roasting to perfection. Set it all on a swipe of a tahini- and garlic-laced yogurt sauce.

- 300g String beans
- 2 Garlic cloves
- 1 Lemon
- 20g Panko
- 30ml Tahini
- 100g Greek yogurt
- 7g Za’atar Zone spices (thyme, sesame seeds, sumac, oregano, fennel seeds, star anise, cinnamon, coriander, cumin)

Preparation

Prepare the kefta
Preheat the oven to 450°F. Mince the garlic. In a medium bowl, combine the beef, panko, ½ the garlic, ½ the tahini, ½ the spices and S&P. Form into 8 oval patties (double for 4 portions).

Roast the vegetables
Remove the stem ends of the string beans. Quarter the radishes. On a lined sheet pan, toss with a drizzle of oil, ½ the remaining spices and S&P. Roast, 8 to 10 min., until crisp-tender.

Cook the kefta
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Cook the kefta*, partially covered, turning occasionally, 6 to 8 min., until browned and cooked through.

Make the sauce
Meanwhile, juice the lemon. In a small bowl, whisk the yogurt, lemon juice, remaining tahini, garlic and spices, 1 tbsp olive oil (double for 4 portions) and S&P.

Plate your dish
Divide ⅓ of the sauce between your plates and spread out in a circular motion. Top with the vegetables and kefta. Serve the remaining sauce on the side. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
