Pad See Ew, a staple of Thai cuisine, is a stir-fry made with rice noodles and soy sauce. It can contain meat but in this dish, we transform it into a vegetarian feast! We take the above-mentioned base elements and add button and shiitake mushrooms and Chinese broccoli. Garnish with a handful of crushed peanuts and there you have it; an authentic, Asian-inspired delight in just 20 minutes!

Preparation

Mise en place
Bring a large pot of water to a boil. Cut off and discard the bottom inch of the Chinese broccoli stems; roughly chop the leaves and stems. Thinly slice the button mushrooms. Cut off and discard the shiitake mushroom stems; thinly slice the caps. Thinly slice the garlic. Cut off and discard the root end of the scallions; thinly slice, separating the white bottoms and green tops. In a bowl, combine the sweet soy sauce, reduced sodium soy sauce and vinegar.

Cook the noodles
Add the rice noodles to the pot of boiling water and cook, 3 to 4 minutes, until al dente (still slightly firm to the bite). Thoroughly drain the noodles and toss with oil to prevent from sticking.

Cook the mushrooms
In a large high sided pan, heat a drizzle of oil on medium-high. Add the white bottoms of the scallions and both kinds of mushrooms; season with S&P. Cook, stirring occasionally, 2 to 3 minutes, until golden brown. Transfer to a bowl and set aside in a warm spot.

Cook the Chinese broccoli
In the same pan, heat a drizzle of oil on medium. Add the garlic and cook, stirring frequently, 1 to 2 minutes, until fragrant. Add the Chinese broccoli. Cook, stirring occasionally, 3 to 4 minutes until the broccoli has wilted.

Finish the noodles
To the pan of Chinese broccoli, add the cooked mushrooms, noodles (separating them with your hands as you add them) and the soy mixture. Cook, stirring frequently, 1 to 2 minutes, until thoroughly combined.

Plate your dish
Divide the finished noodles and vegetables between your plates. Garnish with the green tops of the scallions and peanuts. Bon appétit!
