Tuscan Mac & Cheese
with Roasted Red Peppers & Spinach
Macaroni and cheese, elevated with a Tuscan twist! Macaroni noodles are enveloped in a creamy sauce made from fresh mozzarella cheese and a roasted garlic and pepper spice blend. By adding roasted red peppers and baby greens we’re giving this already yummy dish an explosion of flavour and a burst of colour.

- 20g All-purpose flour
- 1 Roasted red pepper
- 450g Fresh macaroni noodles
- 75ml Heavy cream
- 250g Fresh mozzarella
- 10g Roasted garlic & red pepper spice blend (garlic, salt, sugar, red pepper, powdered vinegar, green pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Preparation

Mise en place
Bring a medium pot of salted water to a boil. Dice the roasted red pepper. Small dice the mozzarella cheese. Mince the garlic.

Cook the pasta
To the pot of boiling water, add the pasta and cook, 2 to 3 minutes or until al dente (still slightly firm to the bite). Reserving about 1½ cups of the pasta cooking water, drain the pasta thoroughly. Toss with a drizzle of olive oil to prevent sticking and set aside in a warm spot. Wipe out the pot.

Start the sauce
In the same pot, heat 2 tbsp of olive oil on medium. Add the garlic and cook, stirring frequently, 30 seconds to 1 minute, until fragrant. Add the flour and cook, stirring constantly, 2 to 3 minutes or until golden. Whisk in the cream and ½ cup of the reserved pasta cooking water. Cook, stirring, 4 to 6 minutes or until thickened. Add the remaining pasta cooking water as necessary until you have a smooth sauce that coats the back of a wooden spoon.

Finish the mac & cheese
To the pot of sauce, add the mozzarella and cook, stirring constantly, 1 to 2 minutes, until the cheese has melted. Add the spice blend, spinach, roasted red pepper and cooked pasta. Cook, stirring frequently, 1 to 2 minutes, until thoroughly combined and heated through; season with S&P to taste.

Plate your dish
Divide the finished mac and cheese between your bowls. Bon appétit!
