Take a seat at your own family-run ristorante with an easy pasta meal that’s sure to satisfy and then some. You’ll plop plump cheese-filled tortellini in an impossibly delicious sauce that marries our brilliant sun-dried tomato pesto with heavy cream and butter. Bring on bite-size broccoli and leafy greens to cover the veggie factor. For a final flourish, generous shards of shaved Parmesan turn the dish into an Italian postcard.

Preparation

Mise en place
Bring a large pot of salted water to a boil. Separate the broccoli head from the stem; peel the stem, discarding the bottom inch, and cut the head into florets. Roughly chop the florets and stem into small, bite-size pieces. Mince the garlic.

Boil the pasta
Add the pasta to the pot of boiling water; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving 1 cup cooking water, drain and toss with a drizzle of olive oil to prevent sticking.

Sauté the broccoli
Meanwhile, in a large, high-sided pan, heat 2 tbsp butter on medium-high. Sauté the broccoli, 5 to 6 min., until browned and softened. Add the garlic and sauté, 30 sec. to 1 min., until fragrant; season with S&P.

Make the sauce & combine the pasta
To the pan of broccoli, add the cream, spinach and ½ the reserved cooking water. Cook, stirring frequently, 2 to 3 min., until the spinach has wilted; season with S&P. Add the pasta and pesto. Cook, stirring constantly, 1 to 2 min., until combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish
Divide the pasta between your plates. Garnish with the cheese. Bon appétit!
