Does the end of summer have you feeling down? Console yourself with succulent beef skewers! Tonight we make mouthwatering ground beef, garlic and scallion patties to cook in the pan until beautifully browned. We up the seasonal ante even more thanks to a sweet and savoury salad: delicate slices of pear, a handful of peppery arugula and a sprinkle of toasted pecans are all drizzled with the maple-Dijon vinaigrette we send your way. Twenty minutes and eight ingredients later, you’ll have a high-protein and high-veg meal on the table!

Mise en place
Place the skewers in a shallow bowl and cover with water. Thinly slice the pear.

Prepare the skewers
In a bowl, combine the ground beef, garlic and ¾ of the scallions; season with the spice blend and S&P. Form into 4 ovals of equal size (double for 4 portions) and flatten each one around a skewer (drain before using).

Toast the pecans
Heat a large dry pan on medium. Add the pecans and toast, stirring occasionally, 2 to 3 minutes, until lightly browned. Transfer immediately to a cutting board to cool, then roughly chop.

Cook the beef skewers
In the same pan, heat a drizzle of oil on medium. Add the beef skewers* to the pan and cook, 4 to 6 minutes per side or until browned and cooked through.

Make the salad & serve
In a large bowl, combine the pear, arugula, toasted pecans and as many of the remaining scallions as you’d like. Drizzle with as much of the vinaigrette as you’d like and toss to combine. Divide the skewers and salad between your plates. Bon appétit!
