with Feta, Fresh Herbs & Spiced Sunflower Seeds

Cold weather makes us want to veg out at home. And we’ve got just the veggies to cover a late-January situation. Roasted carrots, broccoli and butternut squash are showcased hot from the oven, in all their golden-edged and tender glory. They land on a swoosh of hummus, ready to receive a shower of finely chopped mint, cilantro and parsley. Complete with cubes of feta cheese and pan-toasted sunflower seeds for cream and crunch, adding warm pita on the side.

Mise en place
Preheat the oven to 400°F. Quarter the carrots lengthwise. Pick the mint leaves off the stems; roughly chop the leaves. Roughly chop the parsley and cilantro leaves and stems. Combine the herbs in a small bowl.

Roast the vegetables
On a lined sheet pan, toss the carrots with a drizzle of olive oil and S&P. Roast, 10 to 12 min., until beginning to soften. Remove from the oven and add the broccoli (cut into bite-size pieces beforehand if very large), squash, a drizzle of olive oil, all but a pinch of the spices and S&P; toss well. Roast, 14 to 16 min., until tender.

Toast the sunflower seeds
Meanwhile, in a medium pan, heat a drizzle of olive oil on medium-high. Toast the sunflower seeds, stirring frequently, 2 to 3 min., until golden brown; season with the remaining spices and S&P. Transfer to a paper towel-lined plate.

Warm the pita
Warm the pita directly on an oven rack, 1 to 2 min., until soft and pliable.

Plate your dish
Divide the hummus between your plates and spread out in a circular motion. Top with the vegetables. Garnish with the sunflower seeds, cheese, herbs and a drizzle of olive oil. Serve the pita on the side (halve beforehand if desired). Bon appétit!
