Simple, speedy and succulent, this beef dish knows how to wow. With smart ingredients on the block and 10 minutes on the clock, you’ll set a Korean-flavoured supper on the table. Our brightly hued butternut squash ‘rice’ makes a quickie base when cooked in the microwave. It joins sautéed mushrooms in a pan before ground beef browns up with sweet sesame seasonings. The finishing touches are a hoisin and ponzu dressing and a dose of kimchi for a kick-in-the-pants kicker.

Cook the butternut squash rice
In a medium bowl, combine the butternut squash rice and 1 tbsp water (double for 4 portions). Cover and microwave, 2 to 3 min., until tender.

Sauté the vegetables
Meanwhile, in a medium pan, heat a drizzle of oil on medium. Sauté the mushrooms, 2 to 3 min., until slightly browned. Add the butternut squash rice and sauté, 2 to 3 min., until slightly browned; season with ½ the spices and pepper.

Cook the beef
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the beef*; season with the remaining spices and pepper. Cook, breaking up the meat, 3 to 5 min., until cooked through.

Make the dressing
Meanwhile, in a small bowl, combine the hoisin, ponzu, 2 tbsp oil (double for 4 portions) and S&P.

Plate your dish
Divide the beef and vegetables between your plates. Spoon the dressing over. Top with the kimchi. Bon appétit!
