Lemongrass Beef with Shiitake Mushrooms

This fragrant meal—prepared in a single pan!—can brighten up even the rainiest of evenings. We combine ground beef with garlic and lemongrass and serve it over delicious jasmine rice with cilantro, toothsome shiitake mushrooms and cucumber rounds with lime. All you have to do is sit down, get comfortable and enjoy this delightfully textured and flavourful dish.

  • 90g Shiitake mushrooms
  • 15ml Rice vinegar
  • 30ml Soy sauce (low sodium)

Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the lemongrass and garlic; cook, 1 to 2 minutes, until fragrant. Add the ground beef*; season with S&P. Cook, breaking the meat up with a spoon, 4 to 6 minutes, until almost cooked through.

Mise en place
While the beef cooks, cut off and discard the shiitake mushroom stems; thinly slice the caps. Thinly slice the cucumbers into rounds.

Marinate the cucumbers
Halve the lime; juice one half and cut the other into wedges. In a small bowl, combine the cucumbers, vinegar and as much lime juice as you'd like; season with S&P to taste.

Cook the mushrooms
To the pan of beef, add the mushrooms and soy sauce. Cook, stirring frequently, 2 to 3 minutes, until the mushrooms have softened; season with S&P to taste.

Warm the rice & serve
While the mushrooms cook, using a knife, poke a small hole in the bag of rice; microwave 1 to 1.5 minutes. Transfer to a bowl and combine with ½ the cilantro (roughly chop all the leaves and stems before adding); season with S&P to taste. Divide the cilantro rice between your bowls. Top with the lemongrass beef, mushrooms and marinated cucumbers. Garnish with the lime wedges and remaining cilantro. Bon appétit!
