Honey-Mustard Crusted Pork Chops

over Cheesy Mash with Blistered Green Beans

In this fabulous family recipe, we dip our juicy pork chops into a sauce of honey and old-fashioned whole-grain mustard, then a coat of breadcrumbs. We’ll then cook them until they reach crunchy, crusted, golden perfection. Served with blistered green beans and creamy mashed potatoes elevated with cheddar cheese, they’re so delicious, both adults and kids alike will be clamouring for seconds.

Make the cheesy mash
Bring a medium pot of salted water to a boil. Peel and medium-dice the potatoes. Add the potatoes to the boiling water and cook, 14 to 16 minutes, until very tender when pierced with a fork. Reserving ½ cup cooking water, drain the potatoes and return to the pot. Off the heat, add the cheddar. Using a fork (or potato masher), mash the mixture, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P to taste. Set aside in a warm spot.

Mise en place
While the potatoes cook, trim off and discard the stem ends of the green beans. Mince the garlic. In a small bowl, combine the mustard and honey; season with S&P. Place the breadcrumbs in a second small bowl; season with S&P.

Cook the pork
Pat the pork chops dry with paper towel; season with ⅔ of the spice blend and S&P. Coat one side of the pork with the honey-mustard mixture. Dip the coated side of the pork into the breadcrumbs. In a large pan, heat a drizzle of oil on medium-high. Add the pork chops* to the pan, starting breadcrumbs-side down, and cook, 3 to 5 minutes per side, or until nicely browned and cooked through. Transfer to a plate lined with paper towel. Wipe out and reserve the pan.

Sauté the green beans
In the same pan, heat a drizzle of oil on medium-high. Add the green beans to the pan and cook, stirring frequently, 2 to 3 minutes, until beginning to soften; season with the remaining spice blend. Add the garlic and cook, stirring frequently, 30 seconds to 1 minute, until fragrant. Add 2 tbsp water; season with S&P. Cook, stirring frequently, 1 to 2 minutes, until crisp-tender.

Plate your dish
Divide the cheesy mash, pork chops and green beans between your plates. Bon appétit!
