Just chasing the dream here... the classic poulet chasseur or chicken cacciatore dream, that is! For the streamlined Clean15 version of the Italian-inspired dish, our high-protein chicken breasts are seared with a deeply herby spice blend pricked with crushed cayenne pepper. They’re then joined by tender mushrooms and wilted kale cooked in tomato paste, with a demi-glace mixture to sauce it up. Here’s to a successful hunt for a delicious dinner!

Start the chicken chasseur
In a large, high-sided pan, heat a drizzle of oil on medium-high. Pat the chicken dry with paper towel; season with ⅓ of the spices and S&P. Cook, partially covered, 3 to 4 min. per side, until partially cooked.

Meanwhile, quarter the mushrooms. Remove the kale leaves from the stems; roughly chop the leaves.

Sauté the vegetables
In a large pan, heat a drizzle of oil on medium-high. Sauté the onions and tomato paste, 30 sec. to 1 min., until the onions are fragrant and the tomato paste turns dark red. Add the mushrooms, kale, ½ the remaining spices and S&P. Sauté, 2 to 3 min., until lightly browned.

Make the sauce
In a large bowl, combine the demi-glace, 1 cup water (double for 4 portions), the remaining spices and pepper.

Finish the chicken chasseur
To the pan of chicken, add the vegetables and sauce; stir well. Cook, partially covered, 8 to 10 min., until the chicken* is cooked through and the flavours have combined.

Plate your dish
Divide the chicken chasseur (slice the chicken beforehand if desired) between your plates. Bon appétit!
