Cherry Tomato & Fresh Mozzarella Pizza
with Baby Greens & Radish Salad
We don’t know anybody, young or old, for whom pizza night isn’t the most exciting night of the week. What’s more, kids can help out by rolling out the dough, while you do the prep. Top this veggie delight with garlicky tomato sauce, cherry tomatoes and fresh basil, then bake until golden and crisped. Add hand-torn chunks of fresh mozza and scatter on more basil. Serve with a crisp-soft salad on the side for the perfect margherita-style meal. Bellissima!

Preparation

Mise en place
Preheat the oven to 425°F. Set the dough aside to come up to room temperature. Thinly slice the radishes crosswise. Halve the tomatoes. Pick the basil leaves off the stems; roughly chop ½ the leaves. Mince the garlic.

Dress the tomatoes & make the sauce
In a small bowl, combine the tomatoes, chopped basil, ½ the garlic, 3 tbsp olive oil, ½ the spices and S&P. In a second small bowl, combine the tomato sauce, remaining garlic and remaining spices.

Prepare & bake the pizza
On the back of a well-oiled sheet pan, roll or stretch the dough out to a ½ inch thickness. Spread with the sauce and top with the dressed tomatoes. Bake on the bottom rack of the oven, 12 to 14 min., until the dough is cooked. Remove from the oven and top with the cheese (tear into small pieces before adding). Bake, 2 to 3 min., until the cheese has melted and the dough is golden brown.

Make the salad
When the pizza is almost done, in a large bowl, combine the baby greens, radishes, vinaigrette and S&P.

Finish & serve
Transfer the pizza to a cutting board. Top with the remaining basil (tear before adding if very large) and cut into wedges. Divide the pizza and salad between your plates. Bon appétit!
