Broccolini & Bocconcini Naan Pizzetta Bianca
with Herbed Honey Drizzle
Here’s an easy supper that everyone will adore, bar naan! Using the barbecue gives pizza night a whiff of outdoorsiness to say it’s summer. Broccolini gets charred on the grill and splashed with a little white balsamic vinegar. It’ll pair with mini bocconcini for a two-tone topping. For the crust we turn to trusty naan bread, smeared with a mixture of ricotta and basil pesto. Honey speckled with lemony herbs hits the sweet spot.

Preparation

Mise en place
Preheat the oven to 450°F. Heat the BBQ on high, making sure to oil the grill first. Remove the stem ends of the broccolini; toss with a drizzle of oil, ⅓ of the spices and S&P. In a medium bowl, combine the ricotta, pesto, a drizzle of olive oil and ½ the remaining spices. Thinly slice the bocconcini.

Grill the broccolini
Grill the broccolini on the BBQ (or in a grill pan heated on medium-high), 2 to 3 min. per side, until lightly charred and softened. Transfer to a cutting board and cut ⅓ of the broccolini into 1-inch pieces. Transfer the remaining broccolini to a medium bowl and toss with ½ the vinegar. Keep warm.

Assemble the pizzetta
Arrange the naan on a lined sheet pan. Spread with the ricotta mixture. Top with the broccolini pieces, bocconcini, a drizzle of olive oil and S&P.

Bake the pizzetta
Bake the pizzetta, 8 to 12 min., until the cheese has melted. Transfer to a cutting board.

Make the herbed honey
Meanwhile, in a small bowl, combine the honey, remaining vinegar and spices, and pepper.

Plate your dish
Divide the pizzetta (cut into wedges if desired) and remaining broccolini between your plates. Drizzle the pizzetta with the herbed honey. Bon appétit!
