Braised Beef over Garlic Sweet Potato Mash

This dish will flood your dining room with instant cheer. The succulent braised beef comes already infused with herbs and spices; all you need to do is give it a quick pan sear to enjoy the fullness of its flavour. Here we serve our meat over creamy mashed sweet potatoes and accompanied by roasted green beans and red beet rounds seasoned with aromatic Herbes de Provence. This comforting dish will bring a smile to every face and keep the December cold at bay!

  • 200g Trimmed green beans
  • 450g Diced sweet potatoes
  • 100g Red beet rounds
  • 2 Roasted garlic cloves
  • 4g Herbes de Provence (basil, oregano, parsley, marjoram, chives, tarragon, chervil)

    Make the sweet potato mash
    Bring a medium pot of salted water to a boil. Add the sweet potatoes and cook, 8 to 10 minutes or until tender when pierced with a fork. Drain thoroughly and return to the pot. Off the heat, add the roasted garlic, 2 tbsp of butter (double for 4 portions) and a drizzle of olive oil. Using a fork, mash to your desired consistency; season with S&P to taste. Set aside in a warm spot.

    Roast the vegetables
    While the potatoes cook, preheat the oven to 375°F. On a lined sheet pan, toss the green beans with a drizzle of olive oil; season with the spice blend and S&P. Arrange in a single, even layer on half the sheet pan. On the other half, arrange the beets in a single even layer. Use two sheet pans if needed, to not crowd the vegetables. Roast in the oven, stirring once, 15 to 17 minutes, until the beans and beets are tender.

    Warm the braised beef
    While the vegetables cook, in a medium pan, heat a drizzle of olive oil on medium-high. Remove the braised beef from the package and add to the pan with 1 tbsp of water. Cook, stirring frequently, 5 to 7 minutes, until heated through; season with S&P to taste.

    Plate your dish
    Divide the mashed sweet potatoes between your plates. Top with the roasted vegetables and braised beef. Bon appétit!
