Mini-meatloaves: a sure win with the kids. Mini-meatloaves covered in bacon?! Be careful the kids next door don’t hear about it, you’ll be feeding the whole block! The flavour combinations here are spectacular enough to please adult palates too, with goat cheese and sweet grated apple adding oomph and bulk to the mini loaves. On the side, a silky bed of mash and crisp-tender string beans, sautéed in oil, shallot and spices, topped with crunchy almonds—a grande finale, indeed.

Preparation

Make the mashed potatoes
Bring a medium pot of salted water to a boil. Peel and medium-dice the potatoes. Add the potatoes to the pot of boiling water and cook, 14 to 16 minutes, until very tender when pierced with a fork. Reserving 1 cup cooking water, drain the potatoes and return to the pot. Off the heat, add 2 tbsp butter. Using a fork (or potato masher), mash the mixture, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P to taste. Set aside in a warm spot.

Mise en place
Preheat the oven to 450°F. Grate the apple, discarding the core. Halve, peel and mince the shallot.

Prepare & bake the meatloaves
In a large bowl, combine the pork, panko, Dijon mustard, grated apple and ⅔ of the shallot; season with ¾ of the spice blend and S&P. Once combined, add the goat cheese; mix gently to incorporate. Divide and shape the mixture into 4 small loaves of equal size. Place on a lined sheet pan. Halve the bacon crosswise. Top each loaf with 2 pieces of bacon, wrapping them around and tucking them under the loaves. Bake the meatloaves*, 22 to 24 minutes, until cooked through. Switch the oven to broil and cook, 2 to 3 minutes, until the bacon is golden brown.

Toast the almonds
While the meatloaves bake, in a large pan, heat a drizzle of oil on medium. Add the almonds and toast, stirring occasionally, 2 to 3 minutes, until fragrant; transfer to a bowl lined with paper towel and season with S&P. Reserve the pan.

Sauté the string beans
In the same pan, heat a drizzle of oil on medium-high. Add the string beans to the pan and sauté, stirring frequently, 2 to 3 minutes, until beginning to soften. Add the remaining shallot and sauté, stirring frequently, 1 to 2 minutes, until fragrant. Add 2 tbsp water; season with the remaining spice blend and S&P. Sauté, stirring frequently, 1 to 2 minutes, until the string beans are crisp-tender.

Finish & serve
Roughly chop the almonds. To the pan of string beans, add the chopped almonds; stir to combine. Divide the mashed potatoes, sautéed string beans and cooked meatloaves between your plates. Bon appétit!
