Make the mashed potatoes
Bring a medium pot of salted water to a boil. Peel and medium-dice the potatoes. Add the potatoes to the boiling water and cook, 14 to 16 minutes, until very tender when pierced with a fork. Reserving 1 cup cooking water, drain the potatoes and return to the pot. Off the heat, add 2 tbsp butter. Using a fork (or potato masher), mash the mixture, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P to taste. Set aside in a warm spot.

Mise en place
Preheat the oven to 450°F. Grate the apple, discarding the core. Halve, peel and mince the shallot.

Prepare & bake the meatloaves
In a large bowl, combine the pork, panko, mustard, grated apple and ⅔ of the shallot; season with ¾ of the spice blend and S&P. Once combined, add the goat cheese; mix gently to incorporate. Divide the mixture equally to shape 4 small loaves on a lined sheet pan. Halve the bacon crosswise. Top each loaf with 2 pieces of bacon, wrapping it around and tucking it under the loaves. Bake the meatloaves* in the oven, 22 to 24 minutes, until cooked through. Switch the oven to broil and cook, 2 to 3 minutes, until the bacon is golden brown.

Toast the almonds
While the meatloaves cook, in a large pan, heat a drizzle of oil on medium. Add the almonds and cook, stirring occasionally, 2 to 3 minutes, until fragrant; season with S&P and transfer to a cutting board. Reserve the pan.

Cook the green beans
In the same pan, heat a drizzle of oil on medium-high. Add the green beans to the pan and cook, stirring frequently, 2 to 3 minutes, until beginning to soften. Add the remaining shallot and cook, stirring frequently, 1 to 2 minutes, until fragrant. Add 2 tbsp water; season with the remaining spice blend and S&P. Cook, stirring frequently, 1 to 2 minutes, until the green beans are crisp-tender.

Finish & serve
Roughly chop the almonds. To the pan of green beans, add the chopped almonds; stir to combine. Divide the mashed potatoes, finished green beans and cooked meatloaves between your plates. Bon appétit!
